Vegan banana bread

Banana bread is so 2020, oh no...Banana bread may have had its heyday in pandemic times, but it's here to stay for good reason. Because vegan banana bread is an absolute feast at any time of day. In the morning for breakfast, at noon as a cake substitute or in the evening as dessert.


However, I had also lost sight of it for a short time.

Yesterday, when I was hiking or walking with a friend (absolute matter of interpretation), he had banana bread with him. And it was so delicious, so of course I had to bake it. I'm going to use it as a breakfast and strength builder in the morning.


You can eat it with nut puree, maple syrup, or just plain. You can also heat it up in the toaster oven. Banana bread can be kept in the refrigerator for 4-5 days. Or you can cut it into slices after cooling and freeze it. Then it can be kept for up to 2 months. The question is, who can resist this banana bread? So for me, nothing ends up in the freezer.


The best part, though, is that vegan banana bread is not only healthy, but it's made in a snap. All you need is a bowl, a fork and a loaf pan and you're ready to bake vegan banana bread. (Of course, you still need the ingredients, too).

Do not mash all three bananas, but keep one for the topping, because then your banana bread just looks much nicer.

Ingredients:

  • 100g rolled oats

  • 100g flour

  • 3 ripe bananas

  • 80 ml maple syrup

  • 30 g coconut oil

  • 1 tbsp apple cider vinegar

  • 125 ml vegetable milk

  • 125 g walnuts

  • 0,5 tsp baking powder

  • 1 tsp cinnamon

  • Kakonibs

Preparation:

  1. Preheat the oven to 180 degrees top and bottom heat. And line a loaf pan with baking paper.

  2. Mash 2 bananas with a fork. Add all ingredients to a bowl and mix everything with a spatula.

  3. Now pour your finished batter into the baking paper lined pan. Cut your leftover banana in half and press it onto the dough. Now you can top with cocoa nibs and a dash of maple syrup.

  4. Now bake your banana bread at 180 degrees top and bottom heat for about 30 minutes. After the 30 minutes, reduce the heat to 160 degrees and bake the banana bread for another 20 minutes.

  5. Take the banana bread out of the oven and let it cool down for at least 30 minutes before you cut it. Otherwise it will be quite mushy.
